One of my BIGGEST challenges is eating. You'd think, the founder of a food based business would eat all the time, right? WRONG! Actually, I'm sitting here typing this with a growling stomach. Don't judge!
Anywho, eating is one of my biggest challenges. I get caught up in what I'm working on and I lose track of time and before I know it, it's time for dinner. I told myself, I would do better in 2023 (well, I actually said I'd do better around November of 2022). So far, I have. I've eaten more meals lately, than I have in a while. As I sit here, listening to the steady rumble in my belly, I'm thinking about a salad dressing I conjured up yesterday.
There's one thing to know about me, I love sauce and dressings! So when I want to spice up my food, I add a little razzle dazzle and the dressing for yesterday's salad was BOMB! So good, I'm gonna tell you what's in it. At this point, this is the closest you'll get to a recipe from me. (Please note: this is not my salad pictured. I thought I took a picture of it but it appears, I only thought about taking the picture. Picture was added to give you some color on the page.)
Sweet Dijon Vinaigrette
1 squeeze Dijon mustard
1 squeeze Agave
1 splatter White Wine Vinegar (or rice)
1/4 cup Grapeseed Oil (or avocado or olive)
Add all the ingredients to a bowl and stir (or jar and shake...or blender and blend...just use what you got).
I like to put it in a mason jar and shake it like a salt shake (shake it like a salt shaker) until it all blends well. If you use a blender, add the oil last and slowly so it emulsifies because vinegar and oil don't mix. But, you ain't gotta do all that. Just shake it, pour it on your salad and enjoy!
